Thanks to me, our household has an obsession with Hass avocados. It started of simple really. With a guacamole dip here and an avocado slice there, but now it is full blown into a taste frenzy! About 2-3 times a week I try to think of ways to incorporate avocados into our meals, ha! Pinterest has become my new best friend and it’s like the wonderland where all avocado lovers unite, ha! I’m not sure what makes me love the creamy, dreamy goodness of that green vegetable…or is it a fruit?! (Does anyone REALLY know?!) But it doesn’t just taste good, it’s also good FOR you! When I heard that over 75% of the fat in an avocado is unsaturated and that it makes a great substitute for foods high in saturated fats, I was like HALLELUJAH! I was hooked, who knew I’d like such nutrient-dense, cholesterol-free foods?! So now I feel slightly justified with making it a part of our daily diet.

So if you’re feeling lucky and have a recipe to share featuring avocados then see how you can enter! Like I said, I have a slight obsession with avocado and here’s one of my favorite breakfast avocado recipes to prove it.
*Hass Avocados (I used one for two baguette halves)
*eggs
*baguettes
*spinach leaves
*tomatoes
*bacon
*Hollandaise sauce (I buy the packet and make mine from there…because I’m lazy and it still tastes good, ha!)
Now for the directions:
* Fry your bacon and cut your baguettes in half to toast. I put mine in the oven at 350 degrees for 5 mins.
* While that is going on you can start cooking your Hollandaise sauce according to the packet. And Begin poaching your egg. (The poaching of the egg takes up a lot of attention…well at least it did for me, so make sure you can focus, ha!)
* Slice open one Hass Avocado and cut around the edges to remove the skin. Cut your avocado halves into small pieces and place them in a small bowl. Then lightly slat and pepper and begin to mash the avocado into a spread.
* Cut your tomato into slices and chop up your cooked bacon.
* After everything is cooked, it’s assembly time! Place baguette halves on a plate and spread the avocado on top. Then lightly layer the spinach leaves and tomato slices. Your poached egg is next, and then drizzle the Hollandaise sauce over it to taste. Lastly, sprinkle chopped bacon to garnish your dish.
Doesn’t that look amazing?! Let me tell you, it tasted DIVINE! What a great way to start the day!
