Who loves themselves some olives?!

Some of my favorite dishes boast the yummy goodness that is olives. So when I got the opportunity to feature Olives from Spain and share with you some of my tasty treats, I was super excited! These olives mean business and are some of the best. In fact, this month, Olives from Spain will head to Miami for the country’s premiere food festival, Sobe. Yeah, they’re the real deal. But now on to the good stuff, our simple yet very delicious recipes.
This recipe was first introduced to my while my husband and I were still in Seminary. The thing about being in school is that you meet many different people from many countries. One of the sweetest ladies I met was from Germany and she taught me this recipe. There was no name for it, but it was divine, and has become a HUGE hit in our house. So in honor of that sweet friend, we added her beloved country to the name, German Stuffed Bread!
What you’ll need:
* French Bread
* 8oz. Cream Cheese (softened)
* 1 cup of shredded cheese
* 1 1/2 cups of ham chunks (finely chopped)
* 4 pickle spears (finely chopped)
* 4 boiled eggs (finely chopped)
* 1/4 Olives from Spain (finely chopped)
* 1 tbsp of mustard
* 1 tsp salt
* 1 tsp pepper
In a large bowl, add: cream cheese, shredded cheese, ham, pickles, eggs, olives, mustard, salt, and pepper. Mix the ingredients with a spoon until well blended. Cut french bread down the middle. Then scoop out the mixture and generously spread it on both halves of the french bread. Bake in the oven for 20min at 350 degrees.
Slice it up and eat!
In my house, we LOVE breakfast food. Like I’m pretty sure my children would ask for breakfast every meal of the day if I’d let them. But because I am not an 8 year old, I like to add variety in my meals, ha! Therefore I came up with the idea to make Scrambled Egg Bowls.
What you’ll need:
* package of small tortillas
* 18 eggs
* 1 cup of diced ham chunks
* 1/4 cup of diced Olives from Spain
* 3 chopped Roma tomatoes
* 3 green onions chopped
* 1/2 cup of shredded cheese
* salt and pepper to taste
* hot sauce (optional)
Scrambled eggs with olives, cheese, ham, tomatoes, and green onions in a skillet. Place small tortillas in each muffin tin to create a bowl. Add scramble egg mixture in eat tortilla bowl and top with some shredded cheese. Bake in the oven for 10min at 350 degrees. Serve your tasty bowls up with a side of fruit and a fork. My kids gobbled these babies up!
