There are two things that I like as a human being and a cook. The first is easy meals that also taste good. And the second is cheese…not just any cheese, but the gooey liquid gold goodness of velveeta. If loving these things is wrong, then I don’t want to be right. Can I get an amen?! In fact, the other day I was craving something cheesy (pregnant, remember!) and headed to Walmart to indulge myself. There I was met with a variety of wonderful cheesy options, but decided to settle on old faithful, Mexican recipe. Me, cheese, and Mexican food make a good pair I tell ya. Anyway, I thought you guys might be interested in this goodness as well, so here is the recipe.
Did I mention how EASY this recipe is?!
Now are you not excited to try it out?!
Here’s what you’ll need:
*crock pot
*Velveeta 2lb. loaf (I used the original kind)
*large can of cream of chicken soup
*2 large cans of chicken
*2 cans of corn
*1 can of black beans
*2 cans of Rotel (we use one can of original and one mild so it’s not to spicy for the wimps, ha!)
*1/2 gallon of half & half
*chips (for dipping and garnishing)
Toss all your ingredients in the crock pot.
Now I drain the liquid from the chicken, black beans, and corn first.
Also break up the chicken into little shredded pieces with your hands.
Don’t forget to add our ingredient of honor!
Just chop the Velveeta loaf up into little chunks and toss into the crock pot.
I love how it is so smooth and easy to cut up cheese!
Stir well and let it cook for a couple of hours.
Once it’s warm and all the Velveeta is melted, your finished!
It’s time to eat!
When we eat our Cheesy Southwest Chicken Soup, we use chips to dip into that goodness!
Or you can crumble them up and toss them on top.
This is also so tasty and adds a nice crunchy texture to your meal.
So as the days get crazy and busy, remember you can have this yummy meal in just ONE STEP! Plus, it’s oh so cheesy and good!

Yum! That looks delicious! We should *try* it the next time we come to visit! Ha! And I think the best thing I can make with Velveeta is dip… but I am learning more recipes. This one rocks!
