Time.
I just don’t seem to have much of it these days. My mornings start early when I head off to Pure Barre for a quick work out, once I’m home we have to rush the boys to school, Sam to work, and I have the three youngest kiddos at home until we start the afternoon shuffle of picking everyone up. Then begins the dinner, homework, baths, and bed game. And somewhere after all that Sam and I have a brief moment to stare blank faced at each other as we’re spent from such a busy day, before we head to bed. Wash, rinse, and repeat, we do it all over again the next day.
Needless to say we love and appreciate quick, easy, and GOOD meals around here. One of our favorites is a breakfast casserole. I mean the kids eat that thing up! And since it’s not taboo to have breakfast any time of the day, we even have it for dinner…and it does not disappoint. My favorite thing though about this casserole is the fact that I can prepare it the night before, stick it in the fridge, and in the morning pop it in the oven to cook. That makes our mornings so much easier and TASTIER! I know, right?!?! So when I had an opportunity to showcase our quick fix casserole using Country Crock’s Original Spread, I jumped right on it with this recipe in mind! Here’s all you need to know in order to transform your meal time with Country Crock.
What you’ll need:
* 1 dozen eggs
* 1 lb. of sausage
* 1 8oz. can of cream of mushroom soup
* 6 slices of bread
* Country Crock Original Spread
**Preheat oven to 350 degrees**
Now here’s the fun part…making it. Which thankfully is really simple, can I get an amen?!
Brown your sausage in a pan. While that’s cooking take out a 13×9 casserole dish and grab your bread. Butter one side of each slice of bread using Country Crock’s Original Spread and place butter side down in the dish making a layer along the bottom. Next, in a large bowl, add the eggs, cream of mushroom, and sausage. Mix well and pour it in the casserole dish over the bread.
Stick it in the oven to bake for 30 minutes. Let it cool and eat up!
Wasn’t that simple?! Gone are the days of tossing pop tarts at your kids on the way to school. Nope, now they can wake up to the delightful aroma of a warm breakfast. And not to mention how this was a quick fix for you…win, win!

This looks wonderful!! I’m big on breakfast casseroles on the weekend, makes things easy and my girls are always pleased!
We always do a breakfast casserole for holiday mornings, like Christmas. But it would be great for everyday, too!
That looks delicious. I like to make extra batches of waffles on the weekend and freeze them to use throughout the week instead of buying the frozen kind, they make a quick, easy and delicious breakfast on busy school mornings!
