Hope you all enjoyed the first ever Cookin’ With Gpops a few months weeks ago. Last weekend I spent a little time with the old man and we (really he) whipped up some fun recipes for the blog. Boy were they GOOD and I can’t wait to share them with you over the next weeks! First off we have Guiltless Dessert Nachos. Most of us may be trying to shape up for the New Year, but still want a way to indulge a little without feeling bad for it. Or is that just me?? Thus, I bring you this AMAZING dessert.
Oh yeah, these babies are divine. And the kids loved them too!
Here’s what you’ll need:
*1/2 cup of fat-free sour cream
*1/2 cup of fat-free whipped dessert topping (thawed)
*low calorie liquid sweetener (equal to 4 tablespoons of sugar)
*1/4 teaspoon of ground cinnamon
*6-7 8in. fat-free flour tortillas
*butter flavored non-stick cooking spray
*1 tablespoon of Splenda (or any sugar substitute)
*1 pkg. each – raspberries, blueberries, strawberries (and we added blackberries & kiwi)
*2 tablespoons of sliced almonds
*1 1/2 teaspoons of grated semi-sweet chocolate
*pre-mixed cinnamon & sugar (for sprinkling)
*preheat oven to 400 degrees
**all of these ingredients are fat-free items, but you can totally get the full fat goodies if you’d like, ha!**
Grate your chocolate and then chop up all your fruit as desired.
Cut tortillas into triangles and lay them out on a cookie sheet.
A little overlapping is okay.
Lightly spray tortilla triangles with the butter spray and then sprinkle a coating of the pre-mixed cinnamon and sugar on top.
Bake in oven for about 5 minutes until they are crisp.
Don’t they look great?!
Let them cool completely.
Now mix together in a medium bowl; sour cream, whipped cream, liquid sweetener, cinnamon, and sugar.
Here comes the fun part!
Time to make your nachos.
Sprinkle on your sweet/creamy mixture, then add your fruit, chocolate, and almonds as desired!
Eat up and don’t even feel guilty about it!
