Today I am sharing with you one of my all time favorite meals! You can go ahead and thank me, because this is just amazing. As you know we Texans love our Tex-Mex and this dish rivals many restaurants’ meals! No lie. And thanks to my Aunt’s recipe, we now eat it all the time!
But the best part about this meal, is that it’s super simple to make….and feeds a ton. Notice a trend with our cooking here?! Easy and simple. Done!
Here’s what you’ll need:
*10 medium tortillas
*1 whole chicken (we used a rotisserie one)
*1 onion
*green bell pepper
*1 stick of butter
*1 can of cream of chicken
*1 can of cream of mushroom
*2 cups of sour cream (1/2 will be for sauce)
*1 lb of velveeta (cubed)
*2 cups of grater cheese (your choice) for top
*garnish with jalapenos (optional)
*preheat oven to 350 degrees
Debone and cut up your chicken into small pieces.
Saute onions and peppers in a pan at medium/high heat.
Then add in chicken, cream of chicken, velveeta, and 1/2 of your sour cream.
Heat until mixture is melted.
Grab a tortilla and spoon out the mixture on it.
Roll up the tortilla and then place it in a greased 13×9 baking dish.
Repeat until all tortillas are full and in the dish!
Now to make the sauce.
Mix the other 1/2 of the sour cream with the can of cream of mushroom together.
Spread sauce over the top of your enchiladas evenly.
Sprinkle your grated cheese over the sauce covering the entire top.
Bake in the oven until golden and bubbly!
Top off your enchiladas with some jalapenos and eat up!
