A few weeks ago we showed you how to make the amazingly delicious creamy, dreamy chicken enchiladas. Well that meal is just not complete without this side dish! Seriously, the moment our aunt made this with the enchiladas, we were hooked…for life.
And as goes for most of the meals we make on here, not only is casserole tasty, but it is so easy to make! Holla!
Here’s what you’ll need:
* 1 can of whole corn
* 1 can of creamed corn
* 1 (8.5oz) box of Jiffy corn muffin mix
* 1 cup of melted margarine
* 1 tsp of sugar
* 2 eggs
* 1 cup of sour cream
* pre-heat oven to 350 degrees
**In the picture above the recipe has been doubled**
Lightly spray 9×9 baking dish.
Then add all ingredients together and mix well.
If you’re crazy like my dad, you can try a bite.
He made me take one…and I was not a fan. Straight up butter is all I tasted, ha!
Then place the dish in the oven for 45 minutes!
Once it’s done, let it cool for a bit and eat it up!
Looks so good next to the enchiladas right?!
