Here we are with our first breakfast post! Woohoo! The first time we made this meal was over Christmas break and boy was it yummy! Though this is not a Gpops original (not sure where we picked it up from), he usually doesn’t follow recipes exactly anyway. Instead he uses them as more of a suggested starting point and add in his own spins to it. So if you have house guests over for a weekend, or just need to impress family, I highly suggest making this meal!
Sometimes I think it looks too pretty to even eat. But then a few seconds pass, and I don’t feel guilty at all for enjoying this wonder, ha!
What you’ll need:
*4 oz. of softened cream cheese
* 3/4 cup of milk
* 2 Tablespoons of all purpose flour
* 1/4 teaspoon of salt
*12 eggs
* 8 oz of thinly chopped ham (we just used sliced ham, and layered…it’s easier)
*6 oz. of shredded cheese
*1/4 cup of chopped green onions
* 2 Tablespoons of Dijon mustard
**preheat oven to 375 degrees**
Mix together your softened cream cheese, milk, flour, salt, and eggs in a bowl.
We ended up needing to use an electric mixer to finish getting out all the cream cheese chunks.
Lightly grease cookie sheet (which needs to have about 1/2-1 in. sides for the egg mixture to rise).
Line your cookie sheet with wax paper, then lightly grease the paper.
Then pour out egg mixture into cookie sheet.
Bake in oven for 30-35 minutes or until eggs are golden and fluffy.
Once the omelet are out of the oven, thinly layer with it with dijon mustard, ham, shredded cheese, and green onions.
Slowly pick up wax paper and peel omelet away.
Roll omelet as you peel from wax paper.
Garnish your omelet roll and serve!
We served ours with fresh fruit and it was oh so tasty!
